Peroni Honey-soufflé With Currant

I don’t like honey at all – for me it tastes too luscious. I specially took it for a sample with currant, so that it would not be so cloying and turned out to be right! The sour taste of currants just sets off the taste of honey and it turns out much tastier. But of course, everything related to taste is very subjective, but I liked it.
The consistency is not liquid (not like fresh honey), but also not solid (not like frozen butter) – it spreads on a sandwich very well.
